01 - In a large bowl, combine warm water, active dry yeast, and granulated sugar. Allow to rest for 5 minutes until the mixture becomes foamy.
02 - Add all-purpose flour, salt, and olive oil to the yeast mixture. Stir until a dough forms, then knead on a floured surface for 5 to 7 minutes until smooth and elastic.
03 - Place the dough into a greased bowl, cover, and let it rise in a warm environment for 45 to 60 minutes or until doubled in size.
04 - Preheat the oven to 425°F. Line a baking sheet with parchment paper.
05 - Punch down the risen dough and roll it out into a 9 by 13-inch rectangle. Transfer to the prepared baking sheet.
06 - Combine melted butter and minced garlic. Brush the mixture evenly over the dough surface.
07 - Sprinkle shredded mozzarella and grated Parmesan cheese uniformly over the buttered dough.
08 - Using a pizza cutter or sharp knife, lightly score the dough into 8 strips without cutting through the bottom.
09 - Bake in the preheated oven for 15 to 20 minutes until the breadsticks turn golden brown and the cheese bubbles.
10 - Remove from oven, optionally sprinkle with fresh parsley. Allow to cool slightly before separating. Serve warm.
