01 - Preheat the oven to 400°F.
02 - Slice the top off the garlic head to expose cloves. Drizzle with 1 tablespoon olive oil, wrap in aluminum foil, and roast for 30 minutes until soft and golden.
03 - Brush baguette slices lightly with olive oil, arrange on a baking sheet, and bake for 8 to 10 minutes until golden and crisp.
04 - In a mixing bowl, combine diced tomatoes, chopped basil, balsamic vinegar, remaining olive oil, sea salt, and black pepper. Stir gently to blend.
05 - Once cooled, squeeze roasted garlic cloves into a small bowl and mash into a smooth paste.
06 - Spread a thin layer of roasted garlic paste on each toasted baguette slice, then top with the tomato and basil mixture. Serve immediately.
