# How to Make It:

01 - Preheat oven to 350°F.
02 - Cook ground beef in a large skillet over medium heat until browned. Drain excess fat.
03 - Add onion, garlic, and bell pepper to the skillet. Sauté for 3-4 minutes until softened.
04 - Stir in taco seasoning, chili powder, black beans, corn, and diced tomatoes. Simmer for 5 minutes. Season with salt and pepper to taste.

06 - Spread one-third of the meat mixture over tortillas. Sprinkle with one-fourth of the cheese.
07 - Repeat layers twice more: tortillas, meat mixture, cheese. Top with final layer of tortillas and remaining cheese.
08 - Cover loosely with foil and bake for 25 minutes.
09 - Remove foil and bake an additional 10 minutes until cheese is bubbly and golden. Let rest for 5 minutes before slicing.
10 - Garnish with cilantro, jalapeños, and sour cream if desired.

# Expert Suggestions:

01 -
  • The beef filling stays incredibly juicy because all those vegetables release their moisture right into the meat
  • You get that comfort food satisfaction of layered cheesy goodness with a spicy kick that regular lasagna just cant deliver
02 -
  • Don't skip draining the beef. The first time I made this I was lazy about it and ended up with a pool of grease on top
  • The tortillas will absorb moisture and soften during baking. That's exactly what you want. Don't worry if they seem stiff going in
03 -
  • If your tortillas are too stiff to bend, wrap them in a damp paper towel and microwave for 30 seconds
  • Spray the foil touching the cheese with cooking spray so the cheese doesn't stick when you remove it
