15 - Lime wedges

# How to Make It:

01 - Preheat oven to 425°F.
02 - Toss diced sweet potatoes with 1 tbsp olive oil, paprika, and a pinch of salt and pepper. Spread on a baking sheet and roast for 20-25 minutes, flipping halfway, until golden and tender.
03 - While sweet potatoes roast, heat 1 tbsp olive oil in a large skillet over medium heat. Add onions and bell pepper; sauté 4-5 minutes until softened.
04 - Add ground beef, cumin, garlic powder, chili powder, salt, and pepper. Cook, breaking up the meat, until browned and fully cooked, about 7 minutes. Drain excess fat if necessary.
05 - Stir in baby spinach and cook 1-2 minutes until wilted.
06 - To assemble, divide roasted sweet potatoes among four bowls. Top with beef and vegetable mixture, avocado slices, and any desired toppings (cilantro, Greek yogurt, lime wedges).
07 - Serve immediately.

# Expert Suggestions:

01 -
  • Everything comes together in one bowl while feeling like a restaurant meal
  • The sweet and smoky flavor combination works every single time
  • Leftovers actually taste better the next day
02 -
  • Crowding the sweet potatoes on the baking sheet will steam them instead of roasting, so use two sheets if needed
  • Letting the beef get nicely browned in spots adds way more flavor than just cooking it until no longer pink
  • The yogurt or sour cream really should be added right before serving so it stays cool and fresh
03 -
  • Dice your sweet potatoes slightly smaller than you think you should. They roast faster and get more caramelized edges.
  • Taste the beef mixture before adding the spinach. Once those greens hit, you can't adjust the seasoning as easily.
